Martin, I hope you don't mind an observation. First, I love your photographs, and writing. But this is of a health nature.
Have you been tested for a B12 deficiency? Celiac disease (common in us Northern Europeans. Achlorhydria/hypochlorhydria (no/low stomach acid) is common as well, especially in the Irish.
