How about green fried tomatoes? They are one of my favorite things about growing my own tomatoes.
SOOO good but these are still kinda hard to do them. So gonna make some salsa. I have been wanting to try this. Should have taken a picture. CRAZY like 22 under her pine tree, just kinda training itself up it.....

You can set them in a sunny window to continue to ripen. I had a number of green tomatoes, I kept before the killing frost arrived, that ripened on my window sill.
