Dairy is worse than gluten and many people….myself included were diagnosed with a gluten intolerance and I finally went to a natural alternatives person, and it turns out that I am allergic to dairy. The dairy we eat causes terrible inflammation, so they tell you it’s a gluten allergy. However I buy 00 flour from Italy.

Supposedly, North American wheat is 60% gluten while european wheat is only 10%, due to GMO, etc.
