If you cut up the roots and roast them then boil them in hot water they will make an awesome coffee. You can hardly tell the difference. Lowers blood pressure and blood sugar as well. The healthiest plant on the planet and that’s why you see so many commercials on how to kill those “pesky weeds” on tv.
