What's the point of refusing to keep copies of the corrrespondence?

seen as i was the one who wrote this the reason why you need to keep copies is for records this is standard procedure so when you go to court you have these copies as proof if you did not keep them as proof what if the employer bined the letters and said they did not get anything from you??
