The recipe I use, fast, easy and uses honey instead of sugar. I let it rise for half an hour before baking, the first loaf I tried was like a brick! Have added dill weed, garlic and even made a pumpernickel version.
Use organic unbleached flour... buy in bulk, you can store flour in the freezer with no changes to the flour.

I finally (maybe) , I figured out why my bread turned into bricks.
I had forgotten
Metal measuring cups are for dry goods, glass is for liquids.
My last loaves were perfect after this discovery.
It has Only taken me 40 tries. 😂😂
Dark wheat flour has more flavor, but it was a challenge.

I have no metal measuring cups, and honey doesn't like metal either.
I just didn't give it enough time to rise to it's full potential!
Still only takes an hour or a few minutes over an hour to make a loaf of bread, meaning no idea of what to have for dinner to time to make bread and have grilled cheese with tomato soup! When granddaughter is here, she makes sure she's staying for dinner.
