Another factor is, after WW2 like Milk being altered so was wheat. These changes are for the worse for our body. Also before WW2 many many varieties of grains were used for bread so it was not one grain all the time. Variety provides balance...and less digestion issues.
You can now see Ancient Grain options that are suppose to be pre WW2..(also available for making your own home made bread.) I have not experimented to see if this is true. It is what research shows.
