Missed Gluten intolerance (it is not celiac -, different). I have been gluten intolerant for 20 years - and now find that SOURDOUGH works for me because it is fermented long enough to digest the gluten to almost zero (must be a 48-72 hour ferment). It is on the rise in a big way and many don't know they have it as the symptoms can be different for everyone.
