When I make potato soup after the potatoes boil I add cheese to the water. It melts and makes it creamy like milk or add extra cheese to make it cheesy potato. I sauté onion, celery and carrots and add to soup. Put just enough water in pot to cover potatoes.

It is really good. Our mom always made it with potato, milk, dumplings salt pepper.
