I feel like we are at the part of the movie where the villian is monologuing to Bond (gloating, confessing, boasting, assured in his own mind of success) right before he pulls the lever to drop Bond into the shark tank.

I don't think they care much if we know any longer. They may even want us to know to show us how clever they are. They have a timeline and believe we've been sufficiently poisoned and will die in sufficient numbers before we can meaningfully fight back. I see occasional panic in the lower minions who are being sacrificed, as they finally recognize their loyalty has been betrayed, but not with the cabal near the top.
